Banana Bread


  1. Line a 2lb loaf tin with baking parchment.
  2. Sift the flour, salt, baking powder, and cinnamon together and stir in the sugar.
  3. Mix in the egg, sunflower oil and vanilla essence. Do not beat.
  4. Fold in the pecans and mashed bananas, using a fork. Do not beat.
  5. Bake at 180°C for 45-50 minutes.
  6. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack.
